Preheat oven to 350.
Whisk 6-8 eggs. Add 3 T milk.
Add 1 cup cheddar cheese, sliced up pieces of prosciutto and a couple of slices of bread cubed. (I was lucky and had some frozen sourdough bread in my freezer, and it added so much extra flavor.) I added salt, pepper and some onion powder. Poured in a prepared 9×13 baking dish. Bake for 20-25, or until eggs set.
Use whatever you have; bacon, scallions, peppers, etc.
