Breakfast is served!!! I have found my new love and her name is breakfast_and_bowls. Wow…was this ever good and I loved her story showing how she did it. I am using her photo of the completed burrito (hope this is okay!) because boys flew through here inhaled them and you NEEDED to see this. My photo is the little bitty bit that was left for me, and I assure you…outstanding.
You need tortillas, russet potatoes (shredded up, added with salt, pepper and garlic powder, fried up in 2 tbs olive oil – my first ever attempt at hash browns!), bacon, sliced avocado, scrambled eggs with melted Monterey Jack and Cheddar on it and topped with some salsa!
Couple of tidbits:
1. After the potatoes were shredded, I rinsed them off in a strainer to get starch off. Then, patted them dry in a towel. The drier, the crisper.
2. I baked the bacon while doing everything else.
3. You need the big tortillas!
