erekav called this Strawberry Farro Salad the perfect summer salad (when strawberries are peaking), but it was working just fine here in spring time. DELISH!! I was already obsessed with farro, but now am now getting a little obsessed with pistachios in my salad…it’s been two in a row and they add just the right crunch and taste. Ingredients and instructions are just a swipe away! (She put the salad dressing in a blender/nutribullet. I did the same. Add arugula after tossing all other ingredients with dressing and then toss again.) Enjoy!
