Did somebody say Winter? As in Winter Ribollita Soup from epicurious. 🙋‍♀️ This is a friend’s beloved snow day recipe, and I’m happy to share it. Ingredients below. Swipe through pics for directions. Stay warm! ☃️ 👩🏻‍🍳
Ingredients:

INGREDIENTS

1/4 pd panchetta thickly sliced and then chopped into good size pieces
3 tablespoons olive oil, plus more for drizzling
1 large onion, diced
3 large carrots, peeled and coarsely chopped
3 ribs celery, cut into 1/2 inch slices
4 cloves garlic minced
Kosher salt and ground pepper
2 tablespoons tomato paste
1 28 oz can diced tomatoes with juice
3 cans canneellini beans, (1 can pureed in blender with liquid, 2 cans drained and rinsed)
2 teaspoons dried oregano
2 bay leaves
1/2 teaspoon hot red pepper flakes
2 ounce Parmesan rind
7 cups chicken broth
1 cup water
3 cups packed chopped savoy cabbage
3 cups packed chopped chard leaves
1/2 pound stale italian bread, crusts removed, bread cut into 2 inch chunks.
Parmesan cheese, for grating
