Everyone enjoying their local blueberries? This Blueberry Muffin recipe will never fail you! And, with the sprinkling of lemon rind and sugar on the top, it will leave your guests enjoying that little “something extra.” 👩🏻🍳
Blueberry Muffins
2 eggs
1/2 cup milk
1/2 cup melted unsalted butter
2 cups flour
1 cup sugar
2 tsps baking powder
1/2 teaspoon of salt
1 pint blueberries
1 Tbs sugar to be mixed with
1 Tbs grated lemon rind
Instructions
1. Preheat oven to 400 degrees F
2. Grease or paper line 12 large muffin cups.
3. In small bowl, whisk together the eggs, milk and melted butter.
4. In a large bowl, stir together dry ingredients.
6. Using a spoon or rubber scraper, mix liquid ingredients into flour mixture, just until flour is wet. Gently fold in blueberries. Use a scoop to fill in muffin cups.
7. Sprinkle a little lemon rind/sugar mixture on top of each muffin and bake for 20 minutes or until golden. Cool in the pan for a few minutes, then remove and cool on rack.
Makes 12 muffins.
