Greek is the word! Once I saw kalamata olives and feta cheese, I knew I was making this today. And, make it a sheet pan meal? Done deal. I added zucchini and yellow peppers for more color and variety. I also used boneless, skinless chicken thighs because that’s what I had and I like them (so sue me 🤷♀️).
