Grilled too much steak and corn? This salad is your saving grace for your lunch or dinner the next day! Steak, Corn, Tomato & Avocado Salad. 👩🏻🍳. INGREDIENTS:
1 TBS olive oil.
4 ears sweet corn, husked
1 tsp sugar
Cayenne pepper, to taste
1 or 2 small steaks
Iceberg or romaine lettuce
1 pint grape tomatoes, halved
1 or 2 avocados, pitted and cut into chunks
Juice of 1 or 2 limes
Fresh chopped cilantro, to taste
Salt and pepper to taste
INSTRUCTIONS
Place olive oil in skillet and heat. Cut the kernels off the cob and place in skillet, adding sugar and cayenne. Sauté until hot and then place in bowl and allow to cool.
In the meantime, reheat the steak in same skillet to warm.
Mix corn, tomatoes, avocados, lime juice and cut up steak pieces. Mix gently and then add salt and pepper to taste. Add cilantro and toss. Serve over lettuce.
