Had a doctor’s appointment this morning that ran late, got out at lunch and was ravenous. Thank God I could pull this together in less than 30 minutes. My friend Heather gave me this recipe. She is ing a gluten free diet, and I am not, so I combined two recipes and made them one. Funniest thing…udon noodles from Australia! I love Chinese vegetables, so added lots of those and shrimp for protein. Boiled the noodles and did the rest in the wok. Super easy and yum.
