Had a special request from a friend whose daughter loves the salad dressing served at Japanese restaurants, but they can’t seem to find any for purchase. Could I try and make some? 😬 Try I did, and I think it came pretty darn close! Hope she likes it!

Japanese Carrot Ginger Salad Dressing

INGREDIENTS

10 ounces carrots (peeled and chopped )
4 ounces sweet onion ( finely chopped)
2 tablespoons ginger (peeled and finely chopped)
1 tablespoon granulated sugar
1/4 cup soy sauce
1/2 cup rice vinegar
1/2 teaspoon salt
3/4 cup canola oil

Mix all ingredients, except oil, in a blender. Slowly add oil and mix until all smooth.
