I saw my friend post it and became a little obsessed. It was, like 90 degrees today, and I still had to make it. And, I’ve got some news…it did not disappoint!! A new staple, for sure. 👩🏻🍳. Ingredients 5 tablespoons Unsalted Butter -l
1 lb ground sweet turkey sausage
1 small butternut squash, peeled and cubed
1 small yellow onion – diced
3 cloves garlic – minced
1/2 teaspoon kosher salt – plus additional to taste
1/4 teaspoon black pepper
1 teaspoon rubbed sage – or 1 tablespoon chopped fresh sage
1/4 teaspoon ground nutmeg
1 1/2 to 2 cups low-sodium chicken broth
1 pound potato gnocchi*
5 cups loosely packed baby spinach
1/4 cup freshly grated Parmesan
