If you have ham leftover, pair them up with shallots and green beans for a delectable side dish this week. 3 lb green beans stem ends trimmed
6 tb butter
6 oz shallots sliced
1/4 lb cooked ham cut into slivers
salt and ground pepper

Directions

Fill a large pot 3/4 full with water, salt it lightly and bring to a boil over high heat. Add the green beans and cook until just tender-crisp, about 5 minutes. Drain and rinse with cold water to cool; drain again. In a large, heavy frying pan over medium-high heat, melt 4 tb butter. When hot, add the shallots and sauté, stirring frequently, until they begin to brown, about 5 minutes. Add the remaining 2 tb butter, the beans and the hame and toss until heated through, about 5 minutes. Season to taste with salt and pepper. Transfer to a warmed platter and serve at once.
