It is a tale of two snow days out here in Connecticut. Received some “can’t resist” baked goodies, and needed to offset them a bit with some veggies. Enter the “throw whatever you have in your veggie drawer” cabbage soup!
Secret ingredient: V8 juice. 🍅
4 cups chicken broth
46 Oz V8 (spicy, if that’s your thing)
2 garlic cloves, minced
1 28 oz can Italian tomatoes, chopped
1 head chopped cabbage
1 yellow onion, chopped
3 to 4 chopped carrots
2-3 chopped zucchini
1⁄2 teaspoon basil
1⁄2 teaspoon oregano
salt & pepper
DIRECTIONS
Spray pot with non stick cooking spray (or some olive oil) and sauté onions carrots and garlic for 5 minutes.
Add broth, V8, tomatoes cabbage,l, basil, oregano and Salt & Pepper to taste.
Simmer for a about 5-10 minutes until all vegetables are tender then add the zucchini and simmer for another 5 or so minutes.
I love this soup with some grated parmesan!
