My Italian groom is home and was wanting Italian Wedding Soup. We love this soup, although neither of us can recall having it when we lived in Italy. 🤔The name Italian Wedding Soup comes as a reference to a “marriage” of meat and greens. (Maybe that’s like us, when Italian married Irish? 😉) I combined a bunch of recipes to try and simplify it (one called for 6 hours in a slow cooker…too late for lunch), but really add what you think would taste good! Just don’t forget to serve it with a side of quality Parmesan! 👩🏻🍳. ***Italian Wedding Soup with Escarole. *** Ingredients
* 1 pound ground chicken
* 2 eggs, lightly beaten
* 5 Tbs dry bread crumbs
* 4 Tbs grated Parm cheese
* 1 teaspoon dried basil
* 1 teaspoon onion powder
* 1/4 c olive oil * 8 cups chicken broth
* 3 cups thinly sliced escarole
* 1 cup uncooked orzo pasta
* 1 onion chopped
* 4 to 5 finely chopped carrots
* 1/4 c flat leaf parsley
Directions
* In medium bowl, combine meat, egg, bread crumbs, cheese, basil and onion powder; shape into 3/4 inch balls.
* In large pot, heat oil and soften onion, garlic, carrots, escarole * Pour in broth and bring to boiling; add orzo pasta, chopped parsley and meatballs. Return to boil, then reduce heat to medium. Cook at slow boil for 10 minutes, or until pasta is al dente. Stir frequently to prevent sticking.
