1/3 cup lite soy sauce
2 tablespoons rice vinegar
3 tablespoons mirin
1 tablespoon sugar
1 teaspoon sesame oil
3 tablespoons canola oil, divided
1 small white onion, diced
2 teaspoons fresh minced ginger
2 garlic cloves, minced
12 ounces large shrimp, peeled and deveined
1 small red bell pepper, diced
2 carrots, diced
Bunch of asparagus, chopped
toasted sesame seeds and scallions for garnish
Make the stir-fry sauce: In a small bowl, combine the soy sauce, rice vinegar, mirin, sugar and sesame oil until blended and sugar is dissolved. Set aside.
Heat a wok or large frying pan over medium-high heat until hot. Add the 2 tablespoons of oil and swirl to coat. Add the onion, garlic and ginger and stir-fry until fragrant, about 1 minute.
Add the remaining 1 tablespoon of oil and add the shrimp and saute for 2 minutes. Add the asparagus and stir-fry for 2 more minutes. Add the bell pepper and carrots and stir-fry for 1 minute. Add the sauce mixture and toss to coat for 1 minute. Garnish with sesame seeds and scallions serve immediately with hot jasmine rice or brown rice.
