Sun is shining, Spring is in the air…time to lighten up! Super quick and super healthy; happy to have a Mediterranean Quinoa Salad Bowl. Mix a 15 oz can of chickpeas with 1 T of olive oil, 1/2 tsp cumin, 1/2 tsp kosher salt. Salad is greens, cherry tomatoes and cucumber. The grain can be any whole grain (farro, quinoa, couscous, etc.). I love couscous, but had some already prepared quinoa. Add some kosher salt (3/4 tsp), 1 TBS of olive oil and 2 Tbsp of chopped parsley to a cup of your grain.
