Sweet Jesus, this was delicious. I am often asked how often I am going to the grocery store. I try to stretch to every two weeks. I do have the advantage of seeking recipes that use the ingredients I have on hand. However, adjustments can always be made & ingredients substituted. I had a bunch of veggies that needed to be cooked, and I used a couple of tasteofhome recipes as inspiration of what to make. 1st Recipe: Fresh Thai Asparagus, Kale and Garlicky Mushrooms
Ingredients
* 3 tablespoons extra virgin olive oil
* 2 cups fresh mushrooms sliced * 1 pd fresh asparagus, trimmed and cut into 1-1/2-inch pieces *1 carrot * 2 garlic cloves, thinly sliced
* 1/2 teaspoon dried oregano
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
* 2 cups chopped fresh kale
* 2 teaspoons fish sauce or soy sauce
* 1 teaspoon balsamic vinegar

Shrimp Pad Thai
Directions
* In a large cast-iron or other heavy skillet, heat oil over medium-high heat. Add mushrooms; cook, stirring occasionally, until lightly browned, 4-6 minutes. Add asparagus, garlic, oregano, salt and pepper; cook and stir until crisp-tender, 2-4 minutes. Stir in kale; cook and stir until wilted, 2-4 minutes. Remove from heat; stir in fish sauce and vinegar

Ingredients
* 14 ounces cooked thick rice noodles, prepared according to package directions * 1 pound uncooked small shrimp, peeled and deveined
* 4 teaspoons canola oil
* 1 large egg, lightly beaten
* 4 green onions, thinly sliced
* 1/3 cup rice vinegar
* 1/4 cup sugar
* 3 TBS reduced-sodium soy sauce
* 2 TBS fish sauce or additional reduced-sodium soy sauce
* 2 to 3 teaspoons chili garlic sauce
* 2 TBS chopped salted peanuts
Directions
* Cook noodles according to package directions.
In a large skillet or wok, stir-fry shrimp in oil until shrimp turn pink; remove and set aside. Add beaten egg to the pan. Stir-fry for 2-3 minutes. 
Add the kale/lveggie mix, green onions, vinegar, sugar, soy sauce, fish sauce, chili garlic sauce and peanuts; heat through. Return shrimp and noodles to pan and heat through.
