These were easy and delicious, so I’m throwing them up here (even though I left them in a little too long and the onions got burned 🥸.)
Had three pounds of gold potatoes. Sliced them up, but not all the way through. Poured two cups of chicken broth in a baking dish. Placed potatoes in there. Melted a stick of butter, sautéed a couple of onions. Poured those over the potatoes and baked at 400 for an hour or until they were soft. I would recommend starting with some loose foil over it for partial amount of the time, so you don’t burn your onions like I did. 🤦‍♀️
