This has become my version of meal planning: look and see what needs to go and then google those ingredients to see what I come up with. At the front of the it-must-be-used line: zucchini, ed by have-way-too-much-of-it ricotta cheese. Thank you withpeanutbutterontop for this delicious and beautiful (yours, not mine) combination: Zucchini Lasagna Roll Ups. I love a cheesy lasagna, but I don’t necessarily love the heavy carb count. This zucchini lasagna has all the flavors of the classic dish, but with less carbs, and an extra serving of veggies too! 👩🏻‍🍳 .
