This morning, in my attempt at pursuing a keto diet (🤷‍♀️), I put the focus on my side dish. What did I come up with? Keto Breakfast Hash. Had leftover brussel sprouts from dinner, so I knew those were getting in there. Guys, I gotta tell you, it was surprisingly good. You may want to give it a shot for something different. I served mine with a cheddar cheese omelette and it was a good combo. 👩🏻‍🍳
Ingredients:
2 slices of bacon
1/4 onion diced
1/4 c red bell pepper chopped
1 cup brussel sprouts halved
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper

Instructions
Chop up the bacon into bite size pieces and cook in a large skillet over medium high heat.
After those have cooked for a bit, add brussel sprouts.
When those look a little softened, add onions, peppers and seasonings.
Cook 5-7 minutes stirring occasionally.
When all looks cooked, enjoy!
