Yesterday’s Taco Tuesday became today’s Wednesday Wellness (sort of 😉). With our left over taco meat from last night, we threw in chopped romaine lettuce, black beans (rinsed), corn (leftover from dinner), red onions, avocado, cheddar cheese, red onion, cilantro, halved grape tomatoes and tortilla chips with a dollop of sour cream. (We love latejulyorganic chips. So crispy and light!) If someone wanted a little more “dressing,” we had mariesdressing Creamy Chipotle Ranch on hand, and that was perfect. Delish! 👩🏻🍳. :
